Lime, black soap and a stone
Tadelakt isn't waterproof simply because it's polished. In Marrakech, the lime plaster is first compressed with a stone, closing its pores, then sealed with black soap. It's this two-step process — not the shine of polishing alone — that has made hammams and riads possible for centuries.
Tadelakt is a lime plaster native to the Marrakech region, applied while still damp and then compressed with a stone until it turns smooth and almost mineral to the touch. Contrary to a common belief, it isn't the polishing alone that makes it waterproof: freshly burnished lime has its pores closed by the pebble, and then a second operation — washing with black soap — seals the surface. It is the combination of the two gestures, not either one on its own, that has let hammam walls and riad basins go for centuries without crumbling under moisture.
Lime: material and firing
Tadelakt starts with an aerial lime, obtained from local limestone fired at high temperature and then slaked with water — a material craftsmen and suppliers still call "Marrakech lime" today. It is in no way cement: the English Wikipedia article on tadelakt states that the material's basic constituents are lime plaster (not Portland cement), sometimes marble or limestone sand as an aggregate, and a natural soap, most often olive-oil-based. This lime is mixed with water for several hours before any pigment is added, then applied in one thick coat with a wooden float and smoothed with the same tool — a process the same source describes in detail.
This "aerial" lime — as opposed to hydraulic lime — hardens slowly on contact with air, absorbing carbon dioxide from the atmosphere rather than reacting with water the way cement does: it is this gradual hardening, spread over days rather than hours, that gives the craftsman time to work the material before it sets. A plaster that has set too fast can no longer be compressed; the whole art of the gesture is to match one's own pace to the slower rhythm of the lime.
A research team at the Hochschule Wismar (Germany), which has run a study programme on the preservation of Moroccan earthen monuments, classifies tadelakt as a "compressed, hydrophobic polished lime plaster," used to protect surfaces in wet rooms under extreme humidity and temperature conditions (Wolff, 2013). That scientific classification — compressed, hydrophobic — matches the craftsman's gesture exactly: it isn't raw lime that repels water, it's lime once it has been worked.
The gesture: burnishing with a stone, then black soap
Before the lime sets, the artisan — the maalem — applies the plaster in one thick coat with a wooden float, smooths it, then presses the surface with a flat, hard, smooth stone before going over it again with a trowel for the final polish: this is the burnishing (serrage), which mechanically closes the material's pores and gives the wall its satin finish. This step plays out in a precise time window — too early, and the lime hasn't set enough to compact; too late, and it is already too hard to be polished.
Only then comes the soaping: a solution of black soap, traditionally olive-oil based, is applied to the freshly burnished surface to seal it. It is this second step — documented as a treatment in its own right, not a merely cosmetic finish — that closes whatever the burnishing did not manage to seal; maintaining tadelakt over the years means repeating this soaping, not repolishing the stone. The exact chemical nature of this transformation is, given what could be verifiably sourced for this article, less firmly established than its existence: what the academic research on this material confirms is the measurable outcome — a plaster classified as "compressed and hydrophobic" (Wolff, 2013) — not the molecular detail of any reaction between the soap and the lime. What is certain, however, and is the correction owed to the most widespread misconception about this material, is that without this second, soap-based step, burnishing alone does not make a lime wall waterproof.
Marrakech, hammams and riads
Tadelakt owes its name — a Berberised form of the Arabic تدليك, tadlīk — to the very gesture of its application: "to rub, to massage." The Arabic verb دلك (dalaka) it derives from is attested in a reference Arabic-English lexicon, Edward William Lane's, with a primary sense of "he rubbed, or rubbed and pressed, himself... in the hot bath." The etymology therefore points straight to the hammam, before it ever points to the building that now carries its name.
That is precisely where the material proved itself: in the steam rooms of hammams and the basins of riads, where water stands and heat is constant. A non-destructive study using 3D laser scanning documented the ancient hammams at the kasbahs of Tamnougalt and Taourirt, in the Drâa valley — earthen structures protected by a coat of compressed tadelakt (Wolff, Diederichs & Ait El Caid, 2014). It is this same principle — an earth or brick wall made impervious to water by a worked skin of lime — that let Moroccan hammams and riads, in Marrakech especially, function without any applied waterproofing: no tiling, no resin, just lime and gesture.
Tadelakt has not, to date, joined Morocco's UNESCO Intangible Cultural Heritage list, unlike other Moroccan crafts inscribed in recent years such as henna, Arabic calligraphy or the caftan. The gesture therefore remains a living heritage, passed from workshop to workshop, but without the same international recognition as some of the kingdom's other crafts.
Who applies tadelakt today
Tadelakt remains a maalem's trade: a craftsman trained by watching and repeating, often for years, before being able to judge alone, by rhythm and touch, the exact moment to press, to soap, to stop. It is knowledge passed down far more through presence in the workshop, beside a master who corrects the gesture rather than explaining the theory, than through anything written.
In Marrakech, this know-how continues to be practised in traditional craft workshops, for riad-renovation projects as much as for contemporary bathrooms, where tadelakt has spread well beyond the hammam that gave rise to it. Tourist and decorative demand has made the material known far beyond its original uses, but the gesture itself hasn't changed: whether resealing a century-old hammam wall or finishing a contemporary bathroom basin, it is still the same stone and the same black soap doing the work, by hand, on whatever timeline the lime allows.
